Make Spinach Pesto
Description
A simple way to get some greens in! Packed with good nutrition, this Spinach Pesto tastes amazing and can be used in a pasta, on a baked spud or dolloped on a salad. It’s super versatile.
We paired it with some Spaghetti Squash (which was cut in half and baked in the oven for 30-45mins), then scooped the flesh out and added some tomatoes, pesto and micro herbs – fully plant-based and simply delicious!
Leafy Greens

Ingredients - Makes 1 Cup
½ cup pepitas
2 cups spinach
2 tbsp lemon juice
1 tsp garlic powder
8 sundried tomatoes
¼ cup extra virgin olive oil
Salt/pepper as desired
Method
Step 1: Gather your ingredients
Put all of your ingredients into the jug
Step 2: Blend all together in your Kuvings Vacuum Blender
Place the lid on the jug and the noise-reduction cover on
Touch ‘power on’ button
Select vacuum blend or auto blend button
Let the Blender do its thing.
Scrape down the sides with a spatula and blend more if required
