Soft Rock Juice
Description
This simple two-ingredient juice recipe makes a sweet-tasting juice that is excellent for boosting your immune system because of the high levels of naturally made vitamin C.
Both rockmelon and pineapple are super juicy so you will get lots of fresh juice when pressed through a cold press juicer and it will store in the fridge for 3 days.
I also like to leave the seeds and the surrounding “stringy” flesh inside the rockmelon. As they get pressed through the juicer they provide various important nutrients and add an extra earthy flavour to the recipe.

Taste
The two ingredients balance each other well. The flavour was sweet but not overly sweet and there was a soft texture that was very easy to drink.
Ingredients
1 rockmelon
1 pineapple
Juicing Time: 8 mins
Juice Qty: 1500 ml
Serves: 6
Preparation
Rock Melon (whole)
Cut a thin layer off the top and bottom
Stand the rockmelon up on one end and thinly slice off the outer skin (you can juice it but it changes the taste)
Cut in half and then in half again then into pieces to fit in the wide chute
You can leave the seeds intact as they easily go through the juicer
Pineapple (whole)
Cut a thin layer off the top and bottom
Stand the pineapple up on one of the cut ends and then thinly slice off the outer skin (yes, you can juice it but it will change the taste)
Cut into long thin strips to fit down the chute
Chop the core into small chunks
Method
Start with the rockmelon pieces.
Add them one piece at a time and let the juicer press the fruit through before adding the next piece.
Next, add the pineapple pieces one at a time. Again let each piece press through before adding more.
Leave the core until last. You can add all the core pieces at once.
Tip: Choose both fruits that feel heavy in your hand for maximum juice quantity.
