Sunny Spring Juice

Enjoy this great juice cold or with ice on a beautiful spring afternoon.

Description

This juice is brightly coloured and slightly warming like the spring sun. It has a thick texture and is sweet and tangy.

Ingredients

  • 3 apples (any colour)

  • 5 carrots

  • 1/2 lemon

  • 1 piece ginger (2 cm)

    Juicing Time: 3 mins
    Juice Qty: 650ml

Preparation

Apples

  • Remove the stems and remove any stickers

  • Juice apples whole with skin and seeds.

  • Cut in half or quarters if too big to fit into the wide chute.

Carrots

  • Cut carrots lengthwise

  • Juice with skin on

  • Note: If larger carrots are used cut lengthwise again, into quarters

Lemon

  • Remove stickers and cut off any hard end points

  • Slice lemons into rounds with skin on to give more flavour and get more juice from each lemon.

Ginger

  • Cut off a 2cm thick piece

  • Cut into thin slices leaving the skin on

Method

I started making this juice with the cap of the juicer closed as I wanted to mix the apple and ginger flavours first.

Start with the apples adding them whole one at a time.

Next add all the ginger and let the flavour mix before opening the cap to let the juice out.

Now add the carrot halves one at a time going slow enough to let the juicer press each half before adding the next.

Finish by adding all the lemon slices.

Tip: Ginger skin should be thin — never thick and fibrous. You should be able to easily nick the skin with you nail. The fresher the ginger, the more flavour you can acquire from it.

Carrot juice contains large amounts of carotenoids know to prevent cancer. In juicing circles carrot juice is know as the anti-cancer king of the vegetable world. It is believed that beta-carotene can break down the protective mucous membrane around cancer cells.

Raw Carrot juice is also high in antiseptic compounds that inhibit the growth of unfriendly microorganisms in the intestines.

Apples contain pectin which is a gel-like fiber still contained in a cold pressed juice. Pectin works like an intestinal broom to clean and sweep out debris from the colon.

Ginger stimulates digestion, keeps the intestinal muscles toned, and relieves abdominal bloating, vomiting, and diarrhea.

Lemons are a must have ingredient in any juice kitchen. The help make juices last long when storing in the fridge.
