Make a Vegan Caramelised Onion Dip
Description
A very moreish dip! What’s not to love about juicy, caramelised onions with just the right amount of spice. It’s creamy and delicious. The slightly burnt pieces of onion spread throughout, adds heaps of flavour, provided you give it time to do that – it truly needs an overnight (or at least a few hours) in the fridge so you can really taste the combined caramel and spices. It’s worth doing as you will enjoy a much more intense flavoursome dip!
Ingredients (serves 4-8)
1 cup raw cashews (soaked in water for 2 hours)
1 tin of cannellini beans (save 2 tablespoons of the juice)
2 tablespoons of juice from the cannellini beans
2 medium onions (chopped and caramelised)
Juice of 1 lemon
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 cup olive oil
1 teaspoon salt
Chopped Chives/Caramelised Onions for garnish
Method
Step 1: Prepare your base
Add the cashews to a bowl and cover with water. Let them soak for 2 hours.
Cook chopped onions in a pan on medium-high heat with a little water for about 30 minutes until caramelised. Stirring occasionally until they are done. Add more water (1 tablespoon at a time) to prevent them from sticking or burning too much.
Step 2: Gather your ingredients and place them into the blender as follows:
Add your drained cashews
Add your tin of cannellini beans
Add 2 tablespoons of the ‘tin juice’
Add lemon juice
Add salt and spices
Add 2 tablespoons of the caramelised onions (leave the rest to stir through when blended)
Step 3: Blend all together in your Kuvings Vacuum Blender
Place the lid on the jug and the noise-reduction cover on
Touch ‘power on’ button
Select auto blend button
Let the blender do its thing
Step 4: Bring it all together
Pour your blended dip into a bowl and mix through the caramelised onions
Sprinkle with some of the caramelised onions or freshly chopped chives
Serve with crackers, julienne carrots/cucumber/celery or corn chips
Tip: This dip can be used as a spread for wraps, sandwiches or even as a pasta base!
Store any leftovers in a Kuvings Storage Container for about a week.
